Hida Beef, grown in the pristine nature of the Hida region in Gifu Prefecture which is touted as “Sanshi Suimei” (literally purple mountains and clear waters, used to describe scenic natural landscapes), got its unified name in the 1970’s from its former name, Gifu Beef. It is characterized by its fine texture, beautiful “shimofuri” (frost-like mix of red meat and fat), and the rich flavor that spreads throughout the mouth. Enjoy the differences between sirloin and filet.
